POLIS electric oven with 2 trays 60x40 for pastry, bread and pizza

With Teorema Polis you can create your ideal oven depending on the type of use, from pastry shops, to bakeries and pizzerias. The watchword is versatility!

You can decide whether to cook on a tray or directly on the surface of the oven and, in this case, opt for the base of the cooking chamber in refractory material. Depending on your own requirements, you can add an extractor hood and a compartment for the fermentation cell.

The control panel with electronic card is equipped with 20 programs with automated functions, such as "Pre-Heating" that allows preheating the oven in fast or slow mode, "Auto-Cleaning" for cleaning and disinfection of the oven or programming weekly ignitions.

It is reliable even when subjected to long phases of work, and the cooking chambers are individual and stackable according to the customer's needs.

PADDED SHEET PLANE

• It is suitable for baking on trays.
• It allows the formation of an air cushion under the tray that contributes to a non-aggressive exchange of heat towards the product being cooked.
• It quickly reaches set temperature and is sensitive to variation in oven temperature and power settings.

REFRACTORY MATERIAL PLAN

• It is suitable for baking on trays or directly on top of the plane.
• It gives off heat to the product in the areas where it comes into direct contact with it.
• It retains the accumulated heat releasing it slowly.
