Water hardness is one of the main enemies of catering equipment and the most common cause of premature breakdowns. Industrial water softeners remove calcium and magnesium using ion-exchange resins, preventing scale buildup in professional dishwashers, industrial coffee machines, and combi ovens, significantly extending their lifespan.

Pure water for crystal-clear ice and gourmet coffee.
The water softener removes ONLY hardness (calcium and magnesium) by replacing it with sodium, protecting the machines but leaving water with a slightly salty taste. Reverse osmosis removes hardness and also filters heavy metals, chlorine, bacteria, and sediments, producing pure water ideal for drinking or ice-making, but wastes water in the process.
If your area has hard water (>15-20ºfH), it is absolutely essential. Without it, injectors will clog, heating elements will scale (using more electricity), and dishes will come out white and dull. Most manufacturer warranties are voided by scale-related damage.
It is the "brain" of the softener, measuring the water that passes through. Unlike timers (which regenerate by time, wasting salt), the volumetric valve only regenerates after X liters of water have passed, saving a lot of salt and water.
It depends on usage and water quality, but for health standards, sediment and activated carbon filters should be replaced every 6 months to 1 year to prevent bacterial growth inside the cartridge.
Ice appears white due to impurities and hardness in the water. To achieve solid, crystal-clear cubes (gourmet style), you need an ice maker fed with osmotized or very low-mineral water.
Technically it is potable but not ideal gastronomically. By removing calcium and adding sodium, it has a slightly salty taste and may not be suitable for low-sodium diets. For drinking, it is better to install a reverse osmosis or carbon filtration system after the softener.
The main task is keeping the salt tank always filled with specific salt tablets. Additionally, an annual technical check is recommended to clean the injector, verify output hardness, and disinfect the resins.
Most modern models with electronic valves do need a standard outlet (230V). Hydraulic models work with water pressure but are less common and offer fewer configuration options.
To produce pure water, the osmosis membrane must be continuously rinsed. For every liter of pure water produced, the system discards an amount (reject) to the drain with concentrated impurities. Modern industrial units have optimized this ratio significantly.
Combi ovens are very sensitive. Ideally, use osmotized or demineralized water. If using only softened water, carefully monitor chlorides, as softened water can be corrosive to stainless steel chambers at high temperatures if not treated properly.
