The 600 range of water baths include molded top plates with overflow storage. Heating is carried out by means of stainless steel electrical resistances, fixed under the bottom of the tank. The water is discharged through drain taps with removable neck located on the front and equipped with a safety device against accidental opening.
Bain-marie cooking is especially suitable for cooking foods that require delicate and slow cooking, without direct contact with the flame and with greater temperature control, thanks to the gradual release of heat by the hot water. For this reason, the place par excellence for these machines is the pastry shop, to prepare spoon desserts such as creams and soufflés that can be melted without the risk of burning.
